Ingredients:
3 cupBeets, cooked or
-canned, sliced
1 tbspFresh horseradish
-grated (or use about
-4 t prepared horseradish)
8 Cloves, whole (or use
-about ?t caraway seed)
2 cupVinegar
1 tbspBrown sugar
2 tspSalt
Procedures:
1Layer beets in a glass or earthenware bowl, sprinkling layers with horseradish and cloves.
2Boil vinegar with sugar and salt 2 minutes.
3Pour over the beets.
4Cover and refrigerate for 24 hours.
5Notes: * pickled beets -- this recipe could be used as part of a 12-course meal known in polish as wigilia, or on its own.
6Wigilia is eaten after sundown on christmas eve.
7Yield: serves 4-: difficulty: easy.
8: time: 15 minutes preparation, 1 day pickling.
9: precision: approximate measurement ok.
