Grandma's christmas brittle

Ingredients:
3 cupSugar
1/2 cupCorn syrup
1 cupWater
1/4 cupButter
-cut into pieces
1 tspSalt
16 ozDry roasted peanuts
-unsalted
1 1/2 tspBaking soda
1 tspWater
1 tspVanilla
Procedures:
1Grease two cookie sheets and keep warm in a 200 degree oven.
2In a large saucepan, combine the sugar, corn syrup, and 1 cup water.
3Cook over medium heat, stirring constantly, until a candy thermometer reaches 240 degrees (soft-boil stage).
4Stir in butter, salt, and peanuts.
5Continue heating, stirring constantly, until the mixture reaches 300 degrees.
6Meanwhile combine baking soda, 1 teaspoon water and vanilla.
7Remove saucepan from heat.
8Stir in baking soda mixture.
9Quickly pour half the mixture over each cookie sheet.
10Spread with buttered metal spatula to a ? thickness.
11Cool.
12Break into pieces.
13Yield: about 2 ?pounds.
