Orange-glazed sweet potatoes

Ingredients:
4 lbsSweet potatoes, peeled and
-cut into 1-inch
Chunks (about 8 cups)
1 smallBright-skinned orange
1/3 cupButter or margarine
1 tbspLight brown sugar, firmly
-packed
1 tspSalt
1/2 tspFreshly ground black pepper
Procedures:
1Place the potatoes in a 5-quart saucepan and cover with water; bring to a boil over high heat.
2Reduce heat to low and simmer, covered, for 10 minutes until almost tender.
3Meanwhile, use a small sharp knife to remove the peel only, no white pith, from the orange.
4Cut the peel into thin strips to make about ?cup; set aside.
5Melt the butter in a 12 inch skillet over medium-high heat.
6Drain the potatoes well and add to the butter in the skillet; cook and stir for about 5 minutes until the potatoes are lightly browned.
7Stir in the orange peel, brown sugar, salt, and pepper; cook and stir for about 1 minute longer until the sugar is dissolved and the potatoes are well glazed.
8Serve spooned into a serving dish.
9Makes 6 to 8 servings.
