Ingredients:
| 4
| | 6" flour tortillas | | 1 1/2
| cup | Peaches, peeled, diced | | 1 1/2
| cup | Strawberries, diced | | 2
| tbsp | Sugar | | 1
| tbsp | Crystallized ginger, finely | | | - chopped | | 1/2
| tsp | Grated lime peel | | 4
| oz | Vanilla ice cream |

Procedures:
| 1 | Preheat oven to 350°F. | | 2 | Soften tortillas according to package directions. | | 3 | Press each one down in ungreased 10 oz custard cup. | | 4 | Bake 10-15 minutes or until crisp. | | 5 | Set aside to cool. | | 6 | Combine peaches, strawberries, sugar, ginger and lime peel; mix gently until well blended. | | 7 | To assemble, remove tortillas from custard cups. | | 8 | Place each tortilla shell on dessert plate and fill with 1 scoop of vanilla ice cream. | | 9 | Spoon equal portions of fruit salsa over top of ice cream. | | 10 | Garnish with mint sprigs if desired |
