Fruit salsa sundaes

Ingredients:
4 6" flour tortillas
1 1/2 cupPeaches, peeled, diced
1 1/2 cupStrawberries, diced
2 tbspSugar
1 tbspCrystallized ginger, finely
- chopped
1/2 tspGrated lime peel
4 ozVanilla ice cream
Procedures:
1Preheat oven to 350°F.
2Soften tortillas according to package directions.
3Press each one down in ungreased 10 oz custard cup.
4Bake 10-15 minutes or until crisp.
5Set aside to cool.
6Combine peaches, strawberries, sugar, ginger and lime peel; mix gently until well blended.
7To assemble, remove tortillas from custard cups.
8Place each tortilla shell on dessert plate and fill with 1 scoop of vanilla ice cream.
9Spoon equal portions of fruit salsa over top of ice cream.
10Garnish with mint sprigs if desired
