Ingredients:

| cup | Light cream | | 4 1/2
| cup | Heavy cream OR | | 4
| cup | Heavy cream | | 4 1/2
| cup | Milk OR | | 4
| cup | Milk | | 2 1/2
| cup | Sugar | | 2/5
| tsp | Salt | | 1
| | Vanilla bean** OR | | 3
| tbsp | Vanilla extract | | 3/4
| cup | Unsweetened cocoa | | 3
| tbsp | Unsalted butter | | 1 1/2
| tsp | Almond extract | | 6
| oz | Semi-sweet mini-chips |

Procedures:
| 1 | **if using vanilla bean, split pod and scrape out inside. | | 2 | Cut up pod and use entire bean. | | 3 | Over medium heat, combine half & half (or light cream), milk, sugar & salt. | | 4 | As mixture starts heating, add in vanilla, cocoa, butter, & almond extract. | | 5 | Heat until almost ready to boil. | | 6 | Remove from heat and chill. | | 7 | When ready to freeze, stir mixture, strain, and add heavy cream. | | 8 | Freeze in crank style freezer. | | 9 | When half frozen, add mini-chips makes about 1 gallon |
