Ingredients:
| 1
| quart | Water | | 2 1/2
| cup | Sugar | | 1
| | Vanilla bean split | | 4
| | Pears, peeled | | 4
| oz | Dark sweet chocolate | | 1/2
| cup | Whipping cream | | | French vanilla ice cream |

Procedures:
| 1 | Combine water,sugar and vanilla bean in large sauce pan and bring to boil. | | 2 | Add pears, reduce heat and cook gently until tender (30 minutes). | | 3 | Refrigerate pears and syrup for 24 hours. | | 4 | Remove vanilla bean from syrup. | | 5 | Melt chocolate in heavy pan over low heat, stirring frequently until smooth and glossy. | | 6 | Scrape vanilla bean pulp into chocolate. | | 7 | Add cream and bring to a boil, stirring constantly. | | 8 | Remove from heat. | | 9 | To serve, place scoop of ice cream in bowl. | | 10 | Place pear alongside ice cream and spoon chocolate sauce over top |
