Ingredients:
5 cupMilk
1/2 lbsAlmonds (blanched)
-finely ground
1 tbspAlmond extract
2 cupRice, cooked
1/3 cupSugar
1/4 cupRaisins or currants
Procedures:
1Heat milk just to simmering in a large saucepan.
2Add all the ingredients; stir until well mixed.
3Cook over low heat 3 to 5 minutes.
4Serve hot as is traditional for christmas, or chill before serving.
5Notes: * almond soup -- this recipe could be used as part of a 12-course meal known in polish as wigilia, or on its own.
6Wigilia is eaten after sundown on christmas eve.
