Vanilla ice cream - diabetic #1

Ingredients:
JONI'S DIABETIC KITCHEN
1 tbspUnflavored Gelatin
1 1/4 cupSkim milk, divided
2 Eggs, separated
1/4 tspSalt
1 Sugar substitute to equal
-?cup sugar
2 tspVanilla
1 cupHalf-and Half
Procedures:
1Soften gelatin in ?skim milk; set aside.
2Combine remaining 1 cup milk,egg yolks and salt in double boiler; heat until mixture coats spoon.
3Remove from heat.
4Add gelatin mixture and sugar substitute; stir until blended.
5Cool.
6Add vanilla and half-and-half.
7Freeze until firm.
8Beat egg whites until stiff peaks form.
9Remove cream mixture from freezer, and place in chilled bowl; beat until smooth.
10Fold in stiffly beaten egg whites.
11Return to freezer until ready to serve.
