Ingredients:
3 Quail
1 tbspButter, unsalted
1 tbspLard
2 Carrots, sliced
1 smallOnions, sliced
1 cupPeas, shelled
4 Mushroom caps, sliced
- Boletus if possible
2 tbspFlour, all-purpose
1 tspParlsey, flat, chopped
1 pinchSalt
6 cupStock, meat
1/4 cupSour cream
Procedures:
1Clean quail and cut into serving pieces.
2Melt butter and lart in soup pot.
3Brown quail very rapidly for a few minutes; then add vegetables, mushrooms and ?cup water.
4Cook slowly, uncovered, until water almost disappears
