Ni mono (halibut with sake, soy and ginger)

Ingredients:
8 small1 in. thick halibut steaks
1/2 cupMirin or dry sherry
1/2 cupJapanese soy sauce
1/4 cupSake' or dry sherry
2 tspGrated fresh ginger
1/2 tspSalt
GARNISH
8 eachGreen onions, green part
Fringed and spread into fan
8 eachPaper thin carrot curls
Procedures:
1Arrange fish in single layer in large skillet.
2Combine mirin, soy, sake", sugar, ginger and salt and pour over fish.
3Cover, place over medium heat and simmer until fish is opaque, about 10 minutes.
4Transfer to platter.
5Garnish with green onion fans and carrot curls and serve immediately
