Rice cups with guacamole and salsa

Ingredients:
3 cupHot cooked rice
2 ozCheddar cheese, shredded
1/4 cupShredded Parmesan cheese
1 tspGround cumin
1/4 tspGround red pepper
1 tspSalt, divided
Vegetable cooking spray
2 Ripe avocados
2 tbspLime juice
1/4 cupFinely minced cilantro
1/4 cupFinely minced onion
1/4 cupPrepared salsa
1/4 cupDairy sour cream
Cilantro leaves
Procedures:
1Combine rice, cheese, cumin, ground red pepper, and ?teaspoon salt.
2Press firmly and evenly into mini-muffin tins coated with cooking spray and bake at 350 degrees 15 minutes.
3Remove from pans and cool to room temperature.
4Mash avocados with fork in medium bowl.
5Sprinkle with lime juice.
6Add cilantro, onion, salsa, sour cream, and remaining salt; blend well.
7Fill each rice cup with guacamole and top with sprig of fresh cilantro.
