Ingredients:
| 2
| large | Onions, chopped | | 4
| tbsp | Melted chicken fat | | 3
| lbs | Lean, boneless, chuck | | | -roast, diced | | 1
| tbsp | Sweet Hungarian paprika | | 1 1/2
| quart | Chicken stock | | 1/2
| large | Green pepper, cored, seeded | | | -and sliced | | 1
| each | Tomato, peeled and sliced | | 2
| tbsp | Tomato paste | | | Salt and white pepper to | | | -taste |

Procedures:
| 1 | Saute the onion in the butteruntil golden brown. | | 2 | Add the meat and paprika. | | 3 | Cover and simmer for ten minutes, stirring occasionally. | | 4 | If needed, a little chicken broth can be added to prevent sticking. | | 5 | Add the green peppers, tomato, tomato paste, salt and pepper. | | 6 | Pour in 1 ?c chicken broth and cook, covered over low heat for about 2 hours or until meat is tender. | | 7 | During the cooking, stir a few times, adding more chicken broth as needed. | | 8 | Ten minutes before end of cooking time, add remaining stock. | | 9 | Taste and correct seasoning if needed. | | 10 | Serve in heated soup bowls. | | 11 | Makes 5 servings. | | 12 | Gulyas leves - hungarian goulash sou |
