Gulyas leves (goulash soup)

Ingredients:
2 largeOnions, chopped
4 tbspMelted chicken fat
3 lbsLean, boneless, chuck
-roast, diced
1 tbspSweet Hungarian paprika
1 1/2 quartChicken stock
1/2 largeGreen pepper, cored, seeded
-and sliced
1 eachTomato, peeled and sliced
2 tbspTomato paste
Salt and white pepper to
-taste
Procedures:
1Saute the onion in the butteruntil golden brown.
2Add the meat and paprika.
3Cover and simmer for ten minutes, stirring occasionally.
4If needed, a little chicken broth can be added to prevent sticking.
5Add the green peppers, tomato, tomato paste, salt and pepper.
6Pour in 1 ?c chicken broth and cook, covered over low heat for about 2 hours or until meat is tender.
7During the cooking, stir a few times, adding more chicken broth as needed.
8Ten minutes before end of cooking time, add remaining stock.
9Taste and correct seasoning if needed.
10Serve in heated soup bowls.
