Ingredients:
3 cupCooked brown rice
1 cupGrated carrots
1/2 cupFinely chopped onions
1/4 cupSnipped fresh parsley
1 Garlic clove, minced
1 tspSalt
1/4 tspGround black pepper
2 Eggs, beaten
1/2 cupWhole wheat flour
-OR- all-purpose flour
1/4 cupVegetable oil
Procedures:
1Combine all ingredients except oil.
2Form into 12 thin patties, pressing firmly with hands.
3In large skillet, cook patties in heated oil until brown, turning once.
4Serve with dairy sour cream or yogurt, if desired.
