Barbecued lamb on skewers

Ingredients:
2 lbsStewing lamb, cut in
1 ? cubes
4 tbspFresh lemon juice
3 Cloves garlic, minced
1 tbspHot chili oil (or
1/2 tspCayenne and
1 tbspSalad oil)
1/4 tspSalt
1 pinchSugar
Procedures:
1Combine all ingredients and marinate lamb cubes for 2 hours in covered bowl.
2Drain lamb, reserving marinade for basting during barbecuing.
3Skewer lamb; you should have enough for two skewers per serving.
4Barbecue until browned, but still juicy.
5Overcooking will dull flavors.
6Serve with nang (moslem bread) or shao bing (baked sesame rolls)
