Kohlrabi coleslaw with paprika dressing

Ingredients:
4 eachServings
3 tbspWhite wine vinegar
1 tbspSweet Hungarian paprika
1/2 cupOlive oil
2 tspPurchased cream-style white
-horseradish
1/2 tspSugar
2 largeKohlrabi (leafy tops
-reserved), trimmed
-peeled, cut into large
Pieces
1 largeCarrot, peeled, cut into
-2-inch lengths
Procedures:
1Combine vinegar and paprika in bowl.
2Whisk in oil.
3Mix in horseradish and sugar.
4Season with salt and pepper.
5Using medium shredding disk, shred kohlrabi and carrot in processor.
6Transfer vegetables to bowl.
7Thinly slice enough kohlrabi leaves to make 1 cup; add to bowl.
8Toss with dressing.
9Let stand at least 30 minutes before serving.
