Ingredients:
| 2
| lbs | Fresh Okra | | 1/2
| cup | Olive oil | | 1
| large | Onion | | 5
| large | Tomatoes, peeled, seeded | | 3
| | Cloved garlic, halved | | 1
| tsp | Sugar | | | Salt and pepper to taste | | 1
| tbsp | Lemon juice |

Procedures:
| 1 | Wash okra and cut off any hard stems. | | 2 | Blanch in salted water 3 minutes. | | 3 | Heat olive oil. | | 4 | Add onion and cook until translucent. | | 5 | Add okra and cook until it begins to soften. | | 6 | Add tomatoes, garlic, sugar, salt and pepper. | | 7 | Cook 2 to 3 minutes. | | 8 | Pour in enough water to cover. | | 9 | Cover and simmer about one hour, or until okra is tender. | | 10 | Stir in lemon juice. | | 11 | Serve hot. | | 12 | I especially like this recipe using garden fresh ingredients |
