Ingredients:
1 ozBlanched almonds, ground
1 tbspBread crumbs, plain, dried
1 1/2 tspParmesan cheese, grated
1/8 tspSalt
1/8 tspBasil leaves
8 ozChicken cutlets, divided ?/td>
1 tbspSkim milk
1 tbspVegetable oil
2 Lemon wedges
Procedures:
1Pound chicken cutlet to 1/8 inch thickness.
2On sheet of wax paper combine ground almonds, bread crumbs, cheese, salt and basil.
3Dip 1 chicken cutlet into milk, then into crumb mixture, coating both sides evenly; repeat procedure with remaining cutlet, being sure to use all of milk and crumb mixture.
4Heat oil in skillet.
5Add chicken and coat, turning once, until browned on both sides, 3 to 4 minutes on each side.
6Serve with lemon wedges.
7Per serving (each cutlet): 289 cal.; 16 g.
