Ingredients:
1 tbsp+1 t rc margarine
3 Small mac. apples, cored &
Cut into ? thick slices
2 tbspDark raisins
3 tbspGranulatd sugar
2 tbspOrange juice
1 tspCinnamon
2 Large eggs
1/2 cupSkim milk
1/4 cup+ 2 Tb. flour
1 tspVanilla extract
Procedures:
1In heavy med. ovenproof skillet, melt 2 tsp of the margarine.
2Add apples, raisins, 1 t sugar, and orange juice and cinnamon.
3Cook, stirring freq.
46-8 minutes, until apples are just tender.
5Remove apples to bowl.
6Preheat oven to 425d.
7In small bowl, w/ electric mixer, beat eggs until foamy.
8Gradually add milk, flour, the remaining 2 tb. sugar and the vanilla; beat 2 minutes longer, until batter is smooth.
9Add remaining 2 tsp. margarine to same skillet.
10Place in oven to melt, abt 1 minute.
11Pour batter into skillet;bake 10 minutes.
12Remove from oven and spoon apple mixture into center of pancake.
13Return to oven and bake 12-15 min. longer until puffed and golden.
14Cut into quarters.
