Ingredients:
8 ozCan Tomato Sauce
1/2 cupFinely chopped Onion
2 tbspChopped Pimento
1/2 tspChili powder
12 ozChicken Breast Halves *
1 tbspWater
3 cupHot cooked Rice
1/2 cupOrange juice
2 tbspRaisins
1/2 tspOregano, crushed
1 xClove Garlic, minced
2 tspCornstarch
1/4 cupSnipped Parsley
Procedures:
1Several dashes bottled hot pepper sauce * 12 oz boned skinless chicken breast halves, cut into 1" pieces in a large skillet combine tomato sauce, orange juice, onion, raisins, pimiento, oregano, chili pwder, garlic, and hot pepper sauce.
2Bring to boiling; reduce heat.
3Cover and simmer 5 minutes.
4Stir in chicken; return to boiling.
5Cover and simmer 12-15 minutes more or till chicken is tender and no longer pink.
6Meanwhile combine cornstarch and water.
7Stir into skillet.
8Cook and stir till thickened and bubbly.
9Cook and stir 2 minutes more.
10Toss parsley with rice.
11Serve chicken mixture over rice
