Ingredients:
6 eachSwordfish steaks, 1"thick
2/5 cupDry sherry
1 1/2 eachGarlic clove, mince
2 1/4 tspGinger, mince
1 1/2 tspLemon zest, grated
1 cupSoy sauce
1 1/2 eachCarrot, small, minced
1 1/2 tbspRed bell pepper, nince
3 eachScallions, small, chop fine
3 tbspExtra virgin olive oil
Procedures:
11) place fish in glass dish.
22) combine soy sauce,sherry,carrot,garlic,red pepper,ginger,scallions & lemon zest.pour over fish.cover & set aside 1hr at room temperature.remove fish from marinade & pat dry,& brush w/oil.
