Grilled salmon sandwich

Ingredients:
4 Salmon fillet, 3 oz
-skinned
1/2 tspTarragon, dried, crushed
1/4 tspSalt
1/8 tspPepper, black
2 tspOlive oil
2 Garlic clove, minced
1/4 cupChicken broth
1 tbspSweet pickle relish
2 tspLemon juice
1 pinchCayenne
1 1/2 cupBoston lettuce leaves
1/2 cupPlum tomatoes, sliced
4 slicePumpernickel, 1 oz
Procedures:
1Spray indoor ridged grill with nonstick cooking spray; heat over medium heat.
2Or, prepare outdoor grill according to manufacturer"s directions.
3Sprinkle salmon on both sides with tarragon, salt and black pepper.
4Grill 5 minutes on each side, until fish is cooked through.
5Meanwhile, to prepare sauce, in small nonstick skillet, heat oil.
6Add garlic; cook, stirring constantly, 2 minutes.
7Stir in broth, relish, lemon juice and red pepper; cook, stirring frequently, 2-3 minutes, until sauce boils and reduces slightly.
8Remove from heat.
9To assemble sandwich, divide lettuce and tomato evenly over bread.
10Place salmon on top and drizzle evenly with sauce.
