Ingredients:
1 lbsBoneless chicken breast
-- cut into chunks
Salt
Ground black pepper
Paprika
1 tbspVegetable oil
1 cupUncooked rice
1/2 tspDried oregano leaves
1/2 tspGrated lemon peel
1 3/4 cupChicken broth
1 Lemon, juiced
GARNISH
Snipped fresh parsley
Procedures:
1Season chicken with salt, pepper, and paprika.
2Brown chicken in oil in large non-stick skillet over high heat.
3Add remaining ingredients except parsley; bring to a boil.
4Reduce heat, cover, and simmer 20 to 25 minutes, or until rice is tender and liquid is absorbed.
5Fluff with fork.
6Garnish with parsley.
