Lemony chicken salad

Ingredients:
1 canLow-sodium chicken broth
(13 ?oz)
2 eachPkg of Jell-O Lemon gelatin
(sugar free, 4 serving size)
1 cupCold water
1 canCrushed pineapple , undrained
(in unsweetened juice)
2 tbspLemon juice
1/2 tspDried tarragon leaves
(crushed)
Dash of white pepper
1 1/2 cupCubed cooked chicken breast
1/2 cupChopped parsley
1/4 cupChopped red pepper
Procedures:
1Bring chicken broth to a boil in small saucepan.
2Completely dissolve gelatin in boiling broth.
3Add water, pineapple, lemon juice, tarragon and white pepper.
4Refrigerate until slightly thickened.
5Stir in chicken, celery and red pepper.
6Spoon into 4 individual plastic containers or serving dishes.
7Refrigerate until firm, about 2 hours.
8Diabetic exchange(per serving): 2 lean meat, 1 vegetable; also 160 calories, 45mg cholesterol, 450mg sodium, 3gm fat, 11g carbohydrate, 22g protein.
