Ingredients:
30 ozFrozen chopped spinach (3box
16 ozLowfat ricotta cheese
2 cupChopped cooked turkey
2 cupOr 15 oz jar spaghetti sauce
8 ozLowfat mozzarella cheese, sl
1/4 cupGrated Parmesan cheese
Procedures:
1Thaw the spinach and squeeze out any liquid.
2Put about 1/3 of the spinach in the bottom of a lightly oiled casserole.
3Spread half of the ricotta over the spinach.
4Sprinkle on half of the turkey.
5Spoon on half of the spaghetti sauce.
6Top with half of the mozzarella slices.
7Repeat the layering process - 1/3 spinach, rest of ricotta, turkey, spaghetti sauce, mozzarella.
8Finish with the final third of spinach.
9Sprinkle on the parmesan cheese.
10Bake in 350°F oven for 45 to 50 minutes or until browned.
