Orange cheesecake

Ingredients:
CRUST
1 cupSoft wholewheat bread crumbs
1/4 cupBran (natural)
1/4 cupBrown sugar subs. SugarTwin
1/2 tspGround cinnamon
2 tbspButter or margarine
FILLING
1 tbspUnflavored gelatin (1 pkg)
1/3 cupWater
2 cup2% cottage cheese
1/3 cupOrange juice
1 tspOrange rind
1 smallBanana
2 tbspWhite sugar subs. SugarTwin
1 tspLemon juice
1 smallOrange
8 Strawberries or grapes
Procedures:
1Crust combine crumbs, bran, sweetener and cinnamon in a bowl.
2With fingers, rub in butter until mixture is crumbly.
3Press onto bottom of 7 or 8" springform pan.
4Filling in small saucepan, sprinkle gelatin over water and let stand for about 5 minutes to soften.
5Place over low heat, stirring until gelatin dissolves.
6Let cool to room temperature.
7In food processor or blender, combine cottage cheese, orange juice, orange rind, banana, sweetener, lemon juice and dissolved gelatin.
8Puree until smooth (or mash cottage cheese and banana along with sweetener, juices and gelatin or press through sieve).
9Pour over prepared crust.
10Cover and chill in refrigerator 2-4 hours or until set.
11At serving time, remove side from pan.
12With wide metal lifter, slip cheesecake off bottom of pan onto serving plate or leave on base of springform pan.
13Peel orange, removing pith and thin membrane.
14Remove sections.
15Slice strawberries or grapes.
16Arrange on top of cheesecake along with orange slices.
17Makes 8 servings.
