Acorn squash with pine nuts

Ingredients:
2 ea Acorn squash, halved
2 tbspPine nuts
1 ea Garlic clove, minced
1/4 cupGreen onions, sliced
1 1/2 tspOil
1 cupMushrooms, sliced
1/2 cupZucchini, diced
1/2 cupYellow squash, diced
1 cupTomatoes, diced
2 tspLemon juice
2 tspOregano
2 tspBasil
1/4 tspSalt
1/2 tspBlack pepper
Procedures:
1Preheat oven to 375°F.
2Place squash, cut side down, on a baking sheet & cook until tender, about 45 minutes.
3Set aside to cool.
4Scoop out the inside & discard the seeds & strings.
5Saute pine nuts & green onions in oil for 1 minute.
6Add mushrooms, zucchini, yellow squash & tomatoes & saute until just about tender, 5 minutes or so.
7Stir in the remaining ingredients.
8Spoon the vegetable mixture into the squash shells.
9Serve immediately.
