No-cal red beans & rice

Ingredients:
1 lbsDry red kidney beans
2 1/2 cupCelery, finely chopped
2 ea Green bell peppers
-- seeded & finely chopped
2 medOnions, finely chopped
5 ea Bay leaves
6 ea Plum tomatoes
Hot pepper sauce
Procedures:
1Cover beans with water (2-inches above beans).
2Let soak all day or overnight.
3Drain, then replace water just to cover the beans.
4Throw in all the vegetables.
5Bring to boil, reduce heat to simmer for about 45 minutes.
6When beans start cracking and showing white) they"re done.
7Serve with cooked rice, white, or brown.
8Add hot pepper sauce to taste.
