Ingredients:

| lbs | Dry red kidney beans | | 2 1/2
| cup | Celery, finely chopped | | | 2 ea Green bell peppers | | | -- seeded & finely chopped | | 2
| med | Onions, finely chopped | | | 5 ea Bay leaves | | | 6 ea Plum tomatoes | | | Hot pepper sauce |

Procedures:
| 1 | Cover beans with water (2-inches above beans). | | 2 | Let soak all day or overnight. | | 3 | Drain, then replace water just to cover the beans. | | 4 | Throw in all the vegetables. | | 5 | Bring to boil, reduce heat to simmer for about 45 minutes. | | 6 | When beans start cracking and showing white) they"re done. | | 7 | Serve with cooked rice, white, or brown. | | 8 | Add hot pepper sauce to taste. | | 9 | Makes 8 servings |
