Ingredients:
1/2 cupExtra-virgin olive oil
4 tspShallots, diced
4 tspGarlic, minced
1 cupMedium-sized mushrooms
- sliced
1 cupOyster mushrooms, stemmed
1 cupRoma tomatoes, diced small
12 ozFresh spinach, washed
- and stemmed
1/2 cupWhite wine
1 cupVegetable broth
Salt & pepper to taste
24 ozAngel hair pasta, cooked
Procedures:
1Heat olive oil in a small skilled over medium heat.
2Saute shallots, garlic and mushrooms until soft.
3Add roma tomatoes and fresh spinach, then add white wine and mix well.
4When this begins to simmer, add the broth and season with salt and pepper to taste.
5Return to a simmer.
6Toss with cooked angel-hair pasta.
