Apple-chicken salad-(marinated)

Ingredients:
MARINADE
1/4 cupFrozen apple juice-
-concentrate, thawed
2 tbspSalad oil
2 tbspSoy sauce
1 tbspWhite wine vinegar
1 tbspDried savory, crushed
CHICKEN
4 medSkinless, boneless chicken
-breast halves (12 ounces)
DRESSING
3/4 cupMayonnaise or salad dressing
1/4 cupApple juice concentrate
1/4 tbspSalt
1/4 tbspPepper
SALAD
3 cupTorn romaine lettuce
2 cupTorn red leaf lettuce
1/2 cupBroken pecans or walnuts
1/3 cupRed onion rings
2 medApples, cored & sliced
Procedures:
1* note: this recipe needs to be prepared ahead of time! * for marinade: in a small bowl combine apple juice concentrate, salad oil, soy sauce, vinegar, and savory.
2For chicken: place chicken breasts in a plastic bag in a shallow dish.
3Pour marinade over chicken.
4Close bag.
5Refrigerate about 4 hours, turning once.
6Remove meat, reserving marinade.
7Pat chicken dry with paper towels.
8Place chicken on a rack of an unheated broiler pan.
9Broil about 4 to 6 inches from heat for 8 to 10 minutes or till tender, brushing occasionally with reserved marinade.
10(or grill chicken on an uncovered grill directly over medium-hot coals for 20 to 25 minutes or till tender, turning once).
11Remove from heat.
12Cut chicken into strips.
13Cover and chill 2 to 24 hours.
14For dressing: in a small bowl combine mayonnaise or salad dressing, apple juice concentrate, salt and pepper.
15In a large bowl combine the romaine, red leaf lettuce, pecans or walnuts, and onion.
16Divide salad greens among 4 dinner plates.
17Arrange chicken and apples over greens.
18Drizzle salad dressing over salads.
19Makes 4 main-dish salads.
