Australian pork with port & coffee sauce

Ingredients:
4 1/3 lbsPork loin, boned
1 cupStrong coffee
1/2 cupCream
1/3 cupPort
2 tspSugar
1/4 cupWater
2 tspCornstarch
Procedures:
1Preheat oven to 350°F.
2Remove rind from pork and trim fat to make a 1 cm layer.
3Roll and tie the meat.
4Weight pork and calculate cooking time, allow 25-30 mins.
5Per 500 gr.
6Place meat in roasting pan.
7Roast pork for 30 mins.
8Combine coffee, ?c. cream, ?c port & sugar, pour over pork.
9Continue roasting pork for calculated cooking time, basting pork every 15 mins with coffee mixture.
10This basting gives the outside a beautiful golden glaze & helps to keep the meat moist.
11Remove pork from oven when cooked.
12Keep covered in a warm place while making the sauce.
13Skim fat from the pan juices.
14Place juices in a small saucepan with water, remaining ?c cream, remaining port and cornstarch.
15Cook until thickened, strain.
16Slice pork thinly and place a tablespoon or two of sauce on each serving.
17Remaining sauce should be available for guests to add more
