| lbs | Spinach, fresh * | | 1/4
| lbs | Butter | | 1
| each | Onion, large, diced | | 2
| each | Garlic, cloves, minced | | 1/2
| tsp | Salt | | 1/2
| lbs | Emmenthaler cheese, grated | | 1
| tsp | Paprika | | 1/8
| tsp | Nutmeg | | 1/4
| tsp | Pepper |

Procedures:
| 1 | * wash and clean spinach of sand. | | 2 | Dry. | | 3 | ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ ++++ cut spinach into strips. | | 4 | In a large dutch oven, heat butter until bubbly. | | 5 | Add onion and garlic, saute for 2 to 3 minutes. | | 6 | Add spinach. | | 7 | Sprinkle with salt. | | 8 | Cover and steam for 5 minutes. | | 9 | Remove from heat. | | 10 | Grease an ovenproof casserole. | | 11 | Sprinkle half the cheese over the bottom of the casserole. | | 12 | Add the spinach. | | 13 | Sprinkle with paprika, nutmeg, and pepper. | | 14 | Top with remaining cheese. | | 15 | Bake at 360 °F about 20 minutes or until cheese bubbles |
