| tbsp | Black mustard seeds | | 1/2
| tsp | Fenugreek seeds | | 6
| cl | Garlic, crushed | | 1
| tbsp | Ginger, finely | | | Chopped | | 3
| med | Onions | | | Finely sliced | | 1 1/2
| tsp | Turmeric | | 2
| tbsp | Coriander | | 1
| tbsp | Cumin | | 2
| tsp | Chilli powder | | 3
| tsp | Salt | | 2
| tbsp | Vinegar | | 2
| tsp | Garam masala | | 2
| tbsp | Extra vinegar | | 750
| grams | Cubed potatoes (?lb) | | 2
| tbsp | Fresh coriander |

Procedures:
