Ingredients:
1 1/2 kgSkirt steak
(1 ?lb)
1/4 cupOil
1 tbspBlack mustard seeds
1/2 tspFenugreek seeds
6 clGarlic, crushed
1 tbspGinger, finely
Chopped
3 medOnions
Finely sliced
1 1/2 tspTurmeric
2 tbspCoriander
1 tbspCumin
2 tspChilli powder
3 tspSalt
2 tbspVinegar
2 tspGaram masala
2 tbspExtra vinegar
750 gramsCubed potatoes (?lb)
2 tbspFresh coriander
Procedures:
1Cut steak into cubes.
2Heat oil and fry mustard seeds till they burst.= add fenugreek, garlic, ginger and onion.
3Fry until onions are golden.= add turmeric and fry 1 minute.
4Add coriander, cumin and chilli.
5Stir= well.
6Add salt and vinegar, and fry until liquid evaporates.
7Sprinkle in= the garam masala and mix well.
8Add meat and turn till coated.
9Add extra= vinegar if spices start to stick.
10Reduce heat, cover and simmer for 1.5= to 2 hours.
11Add cubed potatoes and cover.
12Cook for a further 20-30= minutes or until potatoes are cooked.
13Garnish with fresh coriander.
