Ingredients:
1 1/2 lbsBeef stew meat
1 tbspOil
1 cupCarrots, sliced thin
1 cupCelery, sliced
1 medOnion, sliced thin
1/2 cupGreen pepper, coarsely chopd
1/4 cupParsley, snipped
4 cupBeef broth
1 canTomatoes, canned, cut up(16
1 cupSpagetti sauce
2/3 cupPearl barley
1 1/2 tspBasil, dry & crushed
1 tspSlat
1/4 tspPepper
Procedures:
1Cut meat into 1" cubes.
2In a large skillet brown meat, half at a time, in hot oil.
3Drain well.
4Meanwhile in crockpot combine carrots, celery, onion, green pepper, and parsley.
5Add broth, undrained tomatoes, spagetti sauce, barley, basil, salt, and pepper.
6Stir in browned meat.
7Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 ?5 hours.
8Skim off fat
