Ingredients:
1 lbsLean ground beef
1 medOnion, chopped
1 tbspSpicy Seasoning Mix **
1/2 tspSalt
8 ozTomato sauce
15 ozCanned pinto beans
-- drained, mashed
8 Flour tortillas, warmed
-- (each about 8 inches)
OPTIONAL
Thinly sliced lettuce
Chopped tomatoes
Sliced green onions
SPICY SEASONING MIX
3 tbspChili powder
2 tspGround cumin
1 1/2 tspGarlic powder
3/4 tspDried oregano leaves
1/2 tspGround red pepper
Procedures:
1Combine all ingredients.
2Cover and store in airtight container.
3Shake before using to blend.
4Quicker than the fast food shop! simmer lean ground beef and spicy seasoning mix 10 minutes, then combine with convenient canned pinto beans.
5Spoon into tortillas and serve with fresh vegetable accompaniments.
6Preparation time: 25 min. In large nonstick skillet, brown ground beef and onion over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into ?inch crumbles.
7Pour off drippings.
8Sprinkle seasoning mix and salt over beef.
9Stir in tomato sauce.
10Simmer 10 minutes, stirring occasionally.
11Stir in beans; heat through.
12To asssemble, spoon equal amounts of beef mixture in center of each tortilla.
13Add lettuce, tomatoes and green onions, if desired.
14Fold bottom edge up over filling.
15Fold right and left sides to center, overlapping edges.
