Beef lo mein with bean sprouts

Ingredients:
1 lbsFresh Chinese egg noodles
- (medium width)
1/2 lbsBeef flank steak
2 tbspOyster sauce
2 tbspDark soy sauce
1 tbspLight soy sauce
1/2 cupChicken broth
2 tspAsian sesame oil
2 tspSugar
1/2 tspWhite pepper
4 tbspPeanut oil
2 sliceFresh peeled ginger, bruised
2 Garlic cloves, bruised
1 tspSalt
1/2 lbsFresh bean sprouts
- tails removed, patted dry
1 cupChinese garlic chives
-=OR=- Green onions
-Cut into 2-in lengths
BEEF MARINADE
1/2 tbspSoy sauce
2 tspRice wine or dry sherry
1/2 tspSugar
1/2 tbspCornstarch
1 tspSesame oil
Procedures:
1Add noodles to a large pot of boiling salted water.
2Stir and when it reaches a second boil, reduce to a simmer and cook for 1 minute longer.
3Drain.
4Rinse with cold water.
5Drain thoroughly.
6Cut meat against the grain in ?inch thick slices.
7Mix beef marinade.
8Add beef strips and let stand for 15 minutes.
9In a medium bowl, mix together oyster sauce, dark and light soy sauces, chicken broth, sesame oil, sugar, and white pepper.
10Preheat a wok.
11Add 2 tablespoons of oil, 1 slice of ginger and garlic, and half of the salt; saute until fragrant.
12Increase to high heat, add beef; stir-fry until browned, about 2 minutes.
13Remove and set aside.
14Heat remaining oil in the wok over medium heat.
15Add the remaining ginger, garlic and salt.
16Pour in sauce mixture, stir and bring to a boil.
17Add noodles and toss to coat with the sauce.
18Add the bean sprouts, chives and return the beef; stir-fry.
19Pick out and discard ginger and garlic. --
