Beef 'n barley dinner

Ingredients:
1 lbsLean ground beef
1/2 cupChopped green pepper
1/2 cupChopped onion
1 Garlic clove, minced
2 1/2 cupWater
16 ozCanned tomatoes, chopped
-- (undrained)
6 ozTomato paste
3/4 cupMedium QUAKER Barley*
1 tbspSugar
1/2 tspSalt (optional)
Procedures:
1In a 4-quart saucepan or dutch oven, brown ground beef.
2Add green pepper, onion and garlic.
3Cook until onion is tender; drain.
4Add remaining ingredients.
5Bring to a boil.
6Reduce heat to low; cover.
7Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
8Five 1-cup servings *note: to use quick quaker barley, substitute 1 cup quick barley for medium barley.
9Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally
