Black forest potato salad

Ingredients:
1 1/3 lbs(4 medium) potatoes
-- cut into 1/3-inch slices
1/3 cupCider vinegar
2 tbspVegetable oil
2 tbspWater
1/4 tspPepper
1 cupDiced tart red apples
1 lbsLight Polish sausage
-- sliced 1/3 inch thick
10 ozSauerkraut, rinsed
-- and thoroughly drained
1/4 cupSliced green onions
1/4 cupChopped parsley
Salt, to taste
Procedures:
1In 2-quart saucepan over medium heat, cook potatoes, covered, in 2 inches boiling water until tender, about 12 minutes; drain.
2Meanwhile, in large bowl whisk together vinegar, oil, water and pepper.
3Mix in apples.
4In large nonstick skillet over medium heat, toss and brown sausage 10 minutes.
5Remove with slotted spoon.
6Drain on paper towels.
7Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture; toss gently.
8Season with salt.
