Cajun lentil stew

Ingredients:
1 tbspOlive oil
1/4 cupOnion, chopped
2 xGarlic cloves, minced
1 1/2 cupWater
Bay leaf
1/2 cupLentils
15 ozTomatoes, whole, peeled(can)
1/3 cupDry red wine
3 tbspTomato paste
1 tspSugar
1 tspBasil
1/2 tspOregano
1/4 tspThyme
1/4 tspSalt
1/8 tspPepper
2 cupZucchini, chopped
Procedures:
1Heat the oil on a 3-qt saucepan over medium-high heat.
2Add the onion and garlic and cook, stirring until softened.
3Add the water and bay leaf and bring to a boil.
4Stir in the lentils and return to a boil.
5Reduce the heat and simmer 30 minutes.
6Stir in the tomatoes wit the liquid, breaking them up with the back of the spoon.
7Add the wine, tomato paste, sugar,basil, oregano, thyme, salt, and pepper.
8Bring to a boil; reduce the heat and simmer 10 minutes longer.
9Add the zucchini and simmer 15 minutes longer.
10Discard the bay leaf before serving.
11This stew is a louisiana-style chili.
