Cajun red beans and rice

Ingredients:
2 cupRed kidney beans, soaked
2 Bay leaves
1 1/2 cupOnion, chopped
1/2 tspThyme
3 Garlic cloves, minced
3/4 cupFresh parsley, minced
1 cupDiced green bell pepper
1 tspSalt
2 tbspRed miso
4 cupFreshly cooked brown rice
Chopped scallions to garnish
Procedures:
1Rinse beans & drain well.
2Cook in 5 cups of water for 50 minutes or until tender, with the bay leaves.
3Add onion, thyme, garlic, parsley, green pepper & salt to pot, simmer over medium low heat for 15 to 20 minutes.
4Add miso & simmer for another 5 minutes.
5Remove bay leaves.
6Serve over hot rice, garnished with scallions.
