Ingredients:
1 Wild hog ( hindquarters)
1 cupOnions, chopped fine
1 cupGreen peppers chopped fine
1 cupCelery, chopped fine
1 tbspGarlic flakes
1 tspDry mustard
1 tspThyme
2 tspSweet paprika
2 tspBlack pepper
1 tspWhite pepper
1 tspRed pepper
2 tspSalt
Procedures:
1In a bowl combine seasonings; set aside.
2Rub the hog quarters thoroughly with ?seasoning mix.
3Place the hog in a large roasting pan with a rack.
4Braise under a very hot broiler until brown.
5Remove from heat & set aside; retain drippings.
6In a large saucepan add the drippings.
7Combine the remaining ingredients and add to the drippings saute at 450 °F for 5 minutes.
8Remove from heat and set aside.
9Make numerous small slits in the hindquarters and place in baking pan.
10Pour sauce over the leg and bake at 350 degrees, turning twice and basting frequently,until leg reaches your desired doneness
