Ingredients:
1/2 lbsDried edible soybeans
-(?lb. = about 3-?C.)
-(soaked overnight)
1 cupChopped carrots
1/3 cupRed bell peppers
1/3 cupGreen bell peppers
1/3 cupYellow bell peppers
1 cupChopped onions
1 cupChopped celery
3 Garlic cloves, minced
2 canChili-style diced tomatoes
-(16 ounce cans)
1 canDark red kidney beans
-(16 ounce can), drained
2 tbspChili con carne seasoning
2 tbspSeasoned pepper
1 tspDried oregano
CONDIMENTS:
Low-fat shredded cheese
Fresh chopped cilantro
Fresh chopped onions
Procedures:
1Place packaged beans in 4-6 cups water and allow to soak overnight.
2Remove and drain.
3Soybeans may be frozen for future use.
4Bring 3 cups beans and 4 cups water to boil and simmer for 1 hour.
5Drain.
6Place all ingredients in crock pot.
7Stir to blend seasonings.
8Set on low andcook 8-10 hours.
9Serves 8-10.
10Top with condiments, as desired.
11(per serving): 159 calories/9 grams protein/21 grams carbohydrates/4 grams total fat/.6 grams saturated fat/0 mg cholesterol/462 mg sodium microwave version: place water and soaked beans in large microwave dish.
12Microwave on high for 20 minutes.
13Drain.
14Place beans and all other ingredients in dish.
15Stir to mix.
16Microwave on high for 30 minutes, medium-high for 15 minutes and medium-low for 20 minutes.
17Allow to stand 15 minutes.
