Carne guisada (beef stew)

Ingredients:
2 lbsVery lean round steak or ste
-w meat -- in 1" pieces
1 1/2 tbspFlour
1/4 cupCooking lard or cooking oil
1 tspSalt
1/2 tspCumin
4 clGarlic
3 Chili anchos, stemmed
-seeded -- but left whole
3 Chiles de arbol, ste
-mmed/seeded
1/4 cupTomato sauce
Procedures:
1Recipe by: rubydakoda Heat oil over medium heat in a heavy iron pot.
2Place beef and flour in bag & shake until beef is well coated.
3Mash garlic, oregano & cumin together.
4When oil is hot, add beef, stirring to prevent scorching, until well browned.
5Pour off the excess oil & add enough water to just cover the meat.
6Add the remaining ingredients.
7Bring mixture to a boil, cover and simmer 1 ?hours, or until meat is very tender and most of liquid has evapoated.
8Serve in flour tortillas and your favorite salsa
