Ingredients:

| tbsp | Yeast | | 1/2
| cup | Milk, warmed to 100 deg. | | 1/2
| cup | Butter | | 1/8
| cup | Maple syrup | | | 1 ea Egg | | 1
| tsp | Lemon rind | | 2
| cup | Whole wheat pastry flour | | | FILLING | | 1
| cup | Diced green apples | | 1/3
| cup | Dates, diced | | 1/4
| cup | Butter |

Procedures:
| 1 | Dissolve yeast in warm milk; set aside. | | 2 | Melt together butter and maple syrup; let cool; add egg, lemon rind, flour, and yeast mixture. | | 3 | Mix together until you have a dough. | | 4 | Refrigerate overnight. | | 5 | Roll dough into 9" circles, one for each 4 rolls; cut each circle into 4 pie-shaped wedges. | | 6 | Cut together apples, dates and butter. | | 7 | Spread fruit mixture over dough wedges. | | 8 | Roll up each crescent, beginning at the wide end. | | 9 | Place on unoiled cookie sheets, turning ends to form crescent shape; let rise to double in size, about 2 ?hours. | | 10 | Bake at 350 degrees 10-15 minutes until golden brown. | | 11 | Makes 12 crescent |
