Apple pancakes with cider sauce

Ingredients:
2 cupBiscuit mix
1/2 tspCinnamon, ground
1 Egg, beaten
1 1/3 cupMilk
1 medApple, shredded
CIDER SAUCE
1/2 cupSugar
1 tbspCornstarch
1/8 tspCinnamon, ground
1/8 tspNutmeg, ground
1 cupApple cider
1 tbspLemon juice
2 tbspButter or margarine
Procedures:
1Combine biscuit mix and cinnamon in a bowl.
2Combine egg and milk; stire into dry ingredients until smooth.
3Stir in shredded apple.
4For each pancake, spoon about ?cup batter onto a hot lightly greased griddle.
5Turn pancakes when tops are covered with bubbles and edges are brown.
6Serve with cider sauce.
7Makes about 13 4-inch pancakes (about half that if you make "em big like i do).
8Sauce: combine first 4 ingredients in a heavy saucepan.
9Gradually add apple cider and lemon juice.
10Cook over medium heat, stirring constantly, until mixture boils.
11Cook 1 minute, stirring constantly.
12Remove from heat, stir in butter or margarine.
13Makes 1 ?cups.
