| tbsp | Thyme | | 1/4
| tbsp | Sage | | 1/2

| cup | Unbleached flour | | 1/2
| cup | Cheddar cheese |

Procedures:
| 1 | Combine seasonings with milk and eggs; add flour and cheese; mix until just blended. | | 2 | Pour into well-oiled muffin tins, filling 2/3 full. | | 3 | Do not preheat oven. | | 4 | Place muffin tin in oven, and heat to 450 degrees. | | 5 | Bake 30 minutes, no peeking. | | 6 | Remove from oven; turn off heat. | | 7 | Pierce popovers on 4 sides at right angles. | | 8 | Return to oven (do not turn on heat). | | 9 | Allow popovers to dry in oven about 10 minutes. | | 10 | Serve immediately |
