Ingredients:

| lbs | Navy beans | | 1
| large | Onion, cut in half | | 5
| | Whole cloves | | 1
| large | Onion, whole | | 1/3
| cup | Dark brown sugar | | 1/2
| cup | Maple syrup, *Amber Grade | | | Plus to taste | | 1/3
| cup | Prepared coarse mustard | | | Plus to taste | | 1
| tsp | Salt, or minus to taste | | | -Fresh grd. pepper, to taste |

Procedures:
| 1 | Wash and pick over beans to remove small stones. | | 2 | In a large saucepan, place the beans with the onion halves and pour in enough water to cover them by 2-inches. | | 3 | Bring to a boil; boil 2 minutes. | | 4 | Remove from heat, cover and let stand for 1 hour. | | 5 | Drain and discard the onion. | | 6 | Fill the pan with an equal amount of fresh hot water and bring to a boil. | | 7 | Simmer the beans for approximately 20-30 minutes, or until partially done. | | 8 | Drain, but reserve cooking water. | | 9 | In the meantime preheat the oven to 300 °F. | | 10 | Stick the cloves in the whole onion and place it in a bean pot. | | 11 | Place the beans on top. | | 12 | In a small bowl, combine sugar, maple syrup, mustard, salt, and pepper, and stir in ?cup of bean cooking water. | | 13 | Pour this mixture over the beans, cover the pot, and place in the middle of the oven. | | 14 | Bake for about 2 ?hours. | | 15 | Uncover the pot and bake another half hour to brown the top. | | 16 | Check that the beans do not cook dry. | | 17 | Taste the beans, add a little more syrup and/or mustard if necessary |
