Australian dinkum chili

Ingredients:
1/2 lbsBacon, sliced
2 tspOil, vegetable
2 medOnions, coarsely chopped
1 Celery stalk, chopped

1 Pepper, Bell
2 lbsBeef sirloin, 1" cubes
1 lbsBeef, ground
1 lbsPork, ground
4 tspChile, red, hot, ground
3 tspChile, red, mild, ground
2 medGarlic cloves, chopped fine
1 tspOregano, mexican preferred
1 tspCumin, ground
2 cupBeer, australian (12 oz)
1 cupTomatoes, whole, (14.5oz)
3 tspSugar, brown
Procedures:
1Fry the bacon in a skillet over medium heat.
2Drain the strips on paper toweling and cut into ? dice and reserve.
3Heat the oil in a large heavy pot over medium heat.
4Add the onions, celery, and green pepper and cook until the onions are translucent.
5Combine all the beef and pork with the ground chile, garlic, oregano, and cumin.
6Add this meat-and-spice mixture to the pot.
7Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.
8Add the beer, tomatoes, and reserved bacon to the pot.
9Bring to a boil, then lower the heat and simmer, uncovered, for 1 ?hours.
10Wave a boomerang over the pot 14 times each hour from this point on.
11(this is definitely optional adding no noticeable flavor, just a touch of authenticity and humor).
12Stir for 3 minutes.
13Taste, adjust seasonings, and add more beer if desired.
14Simmer for 2 ?hours longer.
15Add the brown sugar and simmer for 15 minutes longer, vigorously waving the boomerang over the pot.
