English jam tarts

Ingredients:
2 2/3 cupFlour
1 cupButter, chilled
2 tbspHoney or sugar
1 eachEgg yolk
1/2 cupLess 1 T water, ice cold
1 tspGrated lemon rind or extract
1 eachAssorted jams and preserves
Procedures:
1Using knives, cut together flour and butter until butter is small marble size.
2Make a well, and add sweetener, egg yolk, water and lemon rind.
3Quickly combine all ingredients.
4Place dough on floured surface and knead lightly together for 5 minutes.
5Roll dough into a ball, and chill in the refrigerator for ?hour.
6Roll dough to ?inch thickness, and cut into 4-inch squares.
7Put a tablespoonful of jam in the center of each square, fold into a triangle and seal the edges.
8Place on oiled cookie sheets and bake in preheated 400 degree oven for 10 minutes.
9Tarts will be golden brown when done.
10Serve warm or cooled.
