Ingredients:
| 2 2/3
| cup | Flour | | 1
| cup | Butter, chilled | | 2
| tbsp | Honey or sugar | | 1
| each | Egg yolk | | 1/2
| cup | Less 1 T water, ice cold | | 1
| tsp | Grated lemon rind or extract | | 1
| each | Assorted jams and preserves |

Procedures:
| 1 | Using knives, cut together flour and butter until butter is small marble size. | | 2 | Make a well, and add sweetener, egg yolk, water and lemon rind. | | 3 | Quickly combine all ingredients. | | 4 | Place dough on floured surface and knead lightly together for 5 minutes. | | 5 | Roll dough into a ball, and chill in the refrigerator for ?hour. | | 6 | Roll dough to ?inch thickness, and cut into 4-inch squares. | | 7 | Put a tablespoonful of jam in the center of each square, fold into a triangle and seal the edges. | | 8 | Place on oiled cookie sheets and bake in preheated 400 degree oven for 10 minutes. | | 9 | Tarts will be golden brown when done. | | 10 | Serve warm or cooled. | | 11 | Makes 12 tart |
