High-protein muffins

Ingredients:
2 1/2 cup40% Bran Flakes Cereal
1 1/2 cupRaisins
1 3/4 cupMilk
1 cupStirred Whole Wheat Flour
1 cupSoy Flour
1 cupToasted Wheat Germ
4 tspBaking Powder
1 1/2 tspGround Nutmeg
3/4 tspSalt
4 ea Large Eggs, Slightly Beaten
2/3 cupHoney
2/3 cupVegetable Oil
1/4 cupDark Molasses
Procedures:
1Combine bran flakes, raisins and milk in large mixing bowl.
2Stir together whole wheat flour, soy flour, wheat germ, baking powder, nutmeg and salt; set aside.
3Combine eggs, honey, oil and molasses in small bowl; blend well.
4Add egg mixture to soaked bran flakes; mix well.
5Add dry ingredients all at once to bran mixture, stirring just enough to moisten.
6Spoon batter into paper-lined 3-inch muffin-pan cups, filling 2/3rds full.
7Bake in 350 °F.
8Oven 25 minutes or until golden brown.
9Serve hot with butter and homemade jelly or jam
