Ingredients:
1/4 cupWheat bran
3 tbspBoiling water
2 largeEgg whites or ?cup
--cholesterol free egg prod
1/4 cupSkim milk
2 tbspBrown sugar, packed
2 tbspVegetable oil
2 tbspHoney
2/3 cupAll-purpose flour
1 1/2 tspBaking powder
Ds Salt
Procedures:
1Heat oven to 400?
2Spray bottoms of 6 medium muffin cups, 2 ? x 1 ? with nonstick cooking spray, or line with paper baking cups.
3Mix wheat bran and boiling water; reserve.
4Beat milk, brown sugar, oil, honey and egg whites in medium bowl.
5Stir in bran mixture and remaining ingredients just until flour is moistened (batter will be lumpy).
6Divide batter evenly among muffin cups (cups will be about ?full).
7Sprinkle with sugar if desired.
8Bake about 20 to 25 minutes or until golden brown.
9Immediately remove from pan.
